Highland-side celebrates the green notes of Caorunn Highland Strength, with a twist on the classic cocktail: the Southside. The addition of apple juice helps soften the juniper spice that comes with the higher ABV in Caorunn Highland Strength; bringing the focus back to the core apple notes of this unique spirit.


  • 50ml Caorunn Highland Strength
  • 20ml pressed apple juice
  • 10ml lime juice
  • 5ml sugar syrup
  • Mint leaves

Glass – Coupette


  1. Briefly muddle mint and sugar in a shaker
  2. Add the remaining ingredients with ice and shake until chilled before double straining into a glass
  3. Garnish with a fresh mint sprig

Highland Herbal Highball

Drawing inspiration from the much-loved classic cocktail, the Tom Collins. The Highland Herbal Highball features basil which allows the fresh green herb notes of Caorunn Highland Strength to be highlighted. These flavours are perfectly complemented by the lemon acidity and the sweetness of this serve.


  • 50ml Caorunn Highland Strength
  • 20ml lemon juice
  • 20ml fresh basil syrup* (or sugar syrup and a bunch of fresh basil muddled in the glass)
  • Top with soda water

Glass – Highball

Ice – Cubes


  1. Build, top with soda water and stir
  2. Garnish with a basil sprig and a flared lemon twist

*Basil syrup

Add equal parts sugar, water and basil to a pan and gently heat, before leaving to cool. Strain once cooled. This wonderous concoction will keep for up to 1 week.

Highland Honey

Highland Honey cocktail is a sweet and sour sipping delight. The spicy herbaceousness of Caorunn Highland Strength is perfectly highlighted by the combination of honey, lime and Chartreuse in this serve.


  • 40ml Caorunn Highland Strength
  • 10ml Yellow Chartreuse
  • 25ml lime juice
  • 15ml honey syrup*

Glass – Rock

Ice – Large cubes


  1. Shake all ingredients with ice and strain into a chilled glass
  2. Edible flower garnish

*Honey syrup

Combine 1 part warm water to 1 part honey and stir
